Grilled Lemon Herb Shrimp Skewers

Ingredients
  

  • 1 lb Large shrimp Peeled and deveined
  • 1 whole Yellow bell pepper Chopped into bite-sized chunks
  • 1 whole Red onion Cut into chunks
  • 1 medium Zucchini Sliced into thick rounds
  • 2 tbsp Olive oil For the marinade
  • 1 whole Lemon Juiced and zested
  • 2 tbsp Fresh parsley Finely chopped
  • 1/2 tsp Black pepper Freshly ground
  • 1/2 tsp Salt To taste

Instructions
 

  • Preheat your grill to medium-high heat, approximately 375°F to 400°F. If using wooden skewers, soak them in water for at least 30 minutes prior to grilling.
  • In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, chopped fresh parsley, black pepper, and salt. Whisk well to create the marinade.
  • Add the peeled shrimp, yellow bell pepper chunks, red onion pieces, and sliced zucchini to the bowl. Toss gently until everything is evenly coated in the marinade. Let the mixture sit for 10 to 15 minutes.
  • Thread the marinated shrimp and vegetables onto the skewers, alternating between the shrimp, yellow bell pepper, red onion, and zucchini.
  • Place the skewers onto the preheated grill. Cook for 2 to 3 minutes on each side, or until the shrimp are completely opaque and pink, and the vegetables are tender with a light char.
  • Remove the skewers from the grill and serve immediately, garnished with extra lemon wedges or fresh parsley if desired.
