Grilled Shrimp Salad with Citrus-Herb Marinade

Ingredients
  

  • 1 lb Shrimp Peeled and deveined, large
  • 6 cups Mixed greens Washed and dried
  • 1 cup Cucumber Sliced
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Red onion Thinly sliced
  • 2 tbsp Lime juice Freshly squeezed
  • 2 tbsp Fresh herbs Dill, parsley, and basil, finely chopped
  • 1/4 cup Feta cheese Crumbled
  • 2 tbsp Pine nuts Toasted
  • 1/4 cup Salad dressing Olive oil based, divided

Instructions
 

  • Whisk 2 tbsp of the lime juice, 2 tbsp chopped fresh herbs, and 2 tbsp of the salad dressing in a bowl. Add the shrimp, toss to coat, and let marinate for exactly 15 minutes.
  • Preheat your grill to medium-high heat.
  • Thread the marinated shrimp onto skewers and grill for 2 to 3 minutes per side, until pink and cooked through. Remove from skewers and set aside.
  • In a large serving bowl, combine the 6 cups of mixed greens, 1 cup of cucumber slices, 1 cup of halved cherry tomatoes, and 1/4 cup of thinly sliced red onion.
  • Top the vegetable mixture with the cooked grilled shrimp, 1/4 cup crumbled feta cheese, and 2 tbsp toasted pine nuts.
  • Drizzle the remaining 2 tbsp of salad dressing over the top and gently toss before serving.
