Whisk 2 tbsp of the lime juice, 2 tbsp chopped fresh herbs, and 2 tbsp of the salad dressing in a bowl. Add the shrimp, toss to coat, and let marinate for exactly 15 minutes.
Preheat your grill to medium-high heat.
Thread the marinated shrimp onto skewers and grill for 2 to 3 minutes per side, until pink and cooked through. Remove from skewers and set aside.
In a large serving bowl, combine the 6 cups of mixed greens, 1 cup of cucumber slices, 1 cup of halved cherry tomatoes, and 1/4 cup of thinly sliced red onion.
Top the vegetable mixture with the cooked grilled shrimp, 1/4 cup crumbled feta cheese, and 2 tbsp toasted pine nuts.
Drizzle the remaining 2 tbsp of salad dressing over the top and gently toss before serving.
