Instructions
Preheat your grill to medium-high heat.
Season the beef steak generously with salt and pepper. Grill for 4 to 5 minutes per side for a medium-rare finish. Remove from heat and let it rest for 5 minutes before slicing against the grain.
Place the shucked corn directly on the grill. Cook until lightly charred on all sides, about 8 to 10 minutes. Once cool enough to handle, cut the kernels off the cob.
In a large serving bowl, combine the mixed greens, halved cherry tomatoes, sliced red onion, and charred corn kernels.
Top the fresh salad base with the rested, sliced beef and crumbled gorgonzola cheese.
Drizzle the balsamic vinaigrette over the top right before serving and toss gently to combine.
