Grilled Steak and Corn Salad with Blue Cheese

Ingredients
  

  • 1 lb Beef flank or sirloin steak Seasoned with salt and pepper
  • 6 cups Mixed salad greens Washed and dried
  • 1 cup Cherry tomatoes Halved
  • 2 ears Corn on the cob Shucked
  • 0.5 cup Gorgonzola cheese Crumbled
  • 0.25 cup Red onion Thinly sliced
  • 0.33 cup Balsamic vinaigrette Store-bought or homemade

Instructions
 

  • Preheat your grill to medium-high heat.
  • Season the beef steak generously with salt and pepper. Grill for 4 to 5 minutes per side for a medium-rare finish. Remove from heat and let it rest for 5 minutes before slicing against the grain.
  • Place the shucked corn directly on the grill. Cook until lightly charred on all sides, about 8 to 10 minutes. Once cool enough to handle, cut the kernels off the cob.
  • In a large serving bowl, combine the mixed greens, halved cherry tomatoes, sliced red onion, and charred corn kernels.
  • Top the fresh salad base with the rested, sliced beef and crumbled gorgonzola cheese.
  • Drizzle the balsamic vinaigrette over the top right before serving and toss gently to combine.
