Preheat your outdoor grill or indoor grill pan to medium-high heat.
Pound the 4 chicken breasts to an even thickness. Rub them evenly with 2 tbsp olive oil, 1 tsp salt, 0.5 tsp black pepper, and 1 tsp garlic powder.
Place the poultry on the grill and cook for 6-7 minutes per side, or until a meat thermometer reads an internal temperature of 165°F.
During the last 2 minutes of cooking, place the 8 oz of sliced mozzarella cheese evenly over the breasts. Cover the grill to allow the cheese to melt completely.
Remove from the grill. Top each piece with the sliced tomatoes (from 2 medium tomatoes) and 0.25 cup fresh basil leaves. Drizzle the 2 tbsp balsamic glaze over the top just before serving.
