Instructions
Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil. Spread evenly on a baking sheet and roast for 25-30 minutes until tender.
Cook the white rice according to package directions.
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the ground beef, breaking it apart, and cook until browned. Drain excess fat.
Stir the taco seasoning and beef broth into the skillet with the beef. Simmer for 3-5 minutes until the liquid reduces and creates a sauce.
Assemble the bowls by dividing the cooked rice, roasted sweet potatoes, and seasoned beef evenly. Top with sliced avocado.
