Healthy Ground Beef and Sweet Potato Bowls

Ingredients
  

  • 1 lb Ground beef (80/20) Leaner beef can be used if preferred
  • 2 large Sweet potatoes Peeled and diced into half-inch cubes
  • 2 tbsp Olive oil Divided use
  • 1 cup White rice Uncooked
  • 2 tbsp Taco seasoning Store-bought or homemade
  • 1/2 cup Beef broth Low sodium preferred
  • 1 unit Avocado Sliced, for topping

Instructions
 

  • Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil. Spread evenly on a baking sheet and roast for 25-30 minutes until tender.
  • Cook the white rice according to package directions.
  • In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the ground beef, breaking it apart, and cook until browned. Drain excess fat.
  • Stir the taco seasoning and beef broth into the skillet with the beef. Simmer for 3-5 minutes until the liquid reduces and creates a sauce.
  • Assemble the bowls by dividing the cooked rice, roasted sweet potatoes, and seasoned beef evenly. Top with sliced avocado.
