Ingredients
  

  • 2 tbsp olive oil for sauteing
  • 1 cup onions chopped
  • 1 cup celery diced
  • 1.5 cups carrots peeled and sliced
  • 2 cups potatoes diced
  • 1.5 cups green beans trimmed and cut
  • 1 cup corn frozen or fresh
  • 1 cup peas frozen
  • 28 oz diced tomatoes canned undrained
  • 6 cups vegetable broth low sodium
  • 2 tbsp parsley freshly chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions, celery, and carrots. Sauté for 5 minutes until softened.
  • Stir in the diced tomatoes, vegetable broth, and potatoes. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes.
  • Add green beans, corn, and peas. Simmer for an additional 10 minutes until all ingredients are tender.
  • Stir in fresh parsley, season with salt and pepper to taste, and serve hot.
