Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onions, celery, and carrots. Sauté for 5 minutes until softened.
Stir in the diced tomatoes, vegetable broth, and potatoes. Bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes.
Add green beans, corn, and peas. Simmer for an additional 10 minutes until all ingredients are tender.
Stir in fresh parsley, season with salt and pepper to taste, and serve hot.
