Homemade Chipotle Chicken & Cilantro Lime Rice Bowls

Ingredients
  

  • 1.5 lbs Chicken breast boneless skinless
  • 2 tbsp Chipotle sauce for marinade
  • 1 cup White rice long grain
  • 0.25 cup Fresh cilantro chopped
  • 2 tbsp Lime juice freshly squeezed
  • 15 oz Black beans canned and rinsed
  • 2 whole Bell peppers sliced
  • 1 whole Onion sliced
  • 0.5 cup Pico de gallo fresh
  • 0.5 cup Corn salsa fresh
  • 0.5 cup Guacamole homemade or store-bought
  • 1 cup Shredded lettuce crisp
  • 0.5 cup Shredded Monterey Jack cheese shredded
  • 0.25 cup Sour cream for topping

Instructions
 

  • Marinate the chicken in chipotle sauce, olive oil, salt, and pepper for at least 30 minutes.
  • Cook the rice according to package directions, then stir in chopped cilantro and lime juice. Set aside.
  • Sauté the sliced bell peppers and onions in a skillet over medium-high heat until softened and slightly charred.
  • Grill or pan-sear the marinated chicken for 6-8 minutes per side until fully cooked, then chop into bite-sized pieces.
  • Warm the black beans in a small saucepan over low heat.
  • Assemble the bowls by layering the seasoned rice, beans, chicken, and fajita vegetables.
  • Top with lettuce, cheese, pico de gallo, corn salsa, guacamole, and sour cream before serving.
