Ingredients
  

  • 1 cup Cornmeal Yellow cornmeal preferred for optimal color
  • 1 cup All-purpose flour Spoon and level to avoid dense texture
  • 2/3 cup Granulated sugar Adjust slightly based on sweetness preference
  • 1 tbsp Baking powder Ensure it is fresh for the best rise
  • 1/2 tsp Salt Standard table salt
  • 1 cup Whole milk Room temperature is best
  • 1/2 cup Unsalted butter Melted and slightly cooled
  • 2 Large eggs Lightly beaten, room temperature

Instructions
 

  • Preheat your oven to 400F (200C) and line a standard 12-cup muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt until evenly distributed.
  • In a separate medium bowl, whisk the whole milk, melted unsalted butter, and large eggs until thoroughly combined.
  • Pour the wet mixture into the dry ingredients. Gently fold them together using a spatula until just incorporated. Do not overmix, as this can cause toughness.
  • Divide the batter evenly among the 12 prepared cups, filling each about two-thirds full.
  • Bake in the preheated oven for 15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
