30-Minute Greek Ground Beef Rice Bowl with Tzatziki

Homemade Greek Beef and Rice Bowls

Ingredients
  

  • 1 lb Ground beef (80/20)
  • 1 tbsp Olive oil
  • 1 tbsp Dried oregano
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 3 cups Cooked white or brown rice Kept warm
  • 1 cup English cucumber Diced
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Red onion Finely chopped
  • 1/2 cup Kalamata olives Pitted and halved
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Tzatziki sauce Store-bought or homemade

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula.
  • Stir in the oregano, garlic powder, onion powder, salt, and black pepper. Cook for 7-9 minutes until the meat is browned and cooked through. Drain any excess grease.
  • While the meat cooks, prepare the vegetables by dicing the cucumber, halving the tomatoes and olives, and chopping the red onion.
  • Divide the warm cooked rice evenly among four serving bowls.
  • Top the rice with the seasoned cooked meat, cucumber, tomatoes, red onion, olives, and feta cheese.
  • Drizzle each bowl with 2 tablespoons of tzatziki sauce before serving.
