Homestyle Beef Meatloaf with Tomato Glaze

Ingredients
  

  • 2 lbs Ground beef 80/20 blend preferred for moisture
  • 1/2 cup Couscous Cooked according to package instructions and cooled
  • 1 cup Tomato sauce Divided into two 1/2 cup portions
  • 1/4 cup Fresh parsley Finely chopped
  • 1 cup Cherry tomatoes Kept whole for roasting alongside the meat
  • 2 whole Eggs Large, lightly beaten
  • 1 whole Yellow onion Medium, finely chopped
  • 2 cloves Garlic Minced
  • 1 tsp Salt Kosher or sea salt
  • 1/2 tsp Black pepper Freshly ground

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground beef, cooked and cooled couscous, 1/2 cup of the tomato sauce, chopped parsley, eggs, chopped onion, minced garlic, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overwork the meat.
  • Transfer the mixture to the prepared baking sheet and shape it into a 9x5-inch loaf.
  • Spread the remaining 1/2 cup of tomato sauce evenly over the top and sides of the loaf.
  • Arrange the cherry tomatoes on the baking sheet around the base of the loaf.
  • Bake in the preheated oven for 55 to 65 minutes, or until a meat thermometer inserted into the center reads 160°F (71°C).
  • Remove from the oven and let rest for 10 minutes before slicing and serving alongside the roasted cherry tomatoes.
