Honey Curry Roasted Cauliflower

Ingredients
  

  • 1 head Cauliflower cut into uniform florets
  • 2 tbsp Olive oil or melted coconut oil
  • 2 tbsp Honey melted slightly for easier mixing
  • 1 tbsp Curry powder adjust to taste
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • Wash the head of cauliflower and cut it into evenly sized, bite-sized florets. Place the florets into a large mixing bowl.
  • In a small separate bowl, whisk together the olive oil, honey, curry powder, garlic powder, salt, and black pepper until a smooth glaze forms.
  • Pour the honey curry glaze over the cauliflower florets and toss thoroughly until every piece is completely coated.
  • Spread the coated cauliflower onto the prepared baking sheet in a single layer, ensuring they are not overcrowded so they roast rather than steam.
  • Roast in the preheated oven for 25 to 30 minutes, tossing halfway through, until the cauliflower is tender and the edges are golden brown and caramelized.
  • Remove from the oven, let cool for a few minutes, garnish with fresh chopped parsley, and serve immediately.
