Ingredients
  

  • 12 ears Fresh sweet corn Shucked and silks removed
  • 16 cups Water For boiling
  • 8 cups Ice For the cooling bath

Instructions
 

  • Shuck corn and boil water.
  • Blanch ears for 4 minutes.
  • Transfer to ice bath.
  • Cut kernels from cob and freeze flat on baking sheets before transferring to bags.
