Lemon Dill Baked Salmon

Ingredients
  

  • 24 oz salmon fillets cut into four 6 oz portions
  • 2 tbsp olive oil or melted unsalted butter
  • 2 tbsp fresh dill chopped, plus extra for garnish
  • 1 medium lemon thinly sliced
  • 2 cloves garlic minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper freshly ground

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a rimmed baking sheet with aluminum foil or parchment paper.
  • Place the salmon fillets skin-side down on the prepared baking sheet. Pat them gently dry with a paper towel.
  • Drizzle the olive oil evenly over the salmon fillets. Rub the minced garlic over the top of each piece.
  • Season evenly with kosher salt and black pepper. Sprinkle the chopped fresh dill over the fillets.
  • Arrange the lemon slices evenly on top of each seasoned salmon fillet.
  • Bake in the preheated oven for 15 to 20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  • Remove from the oven, garnish with extra fresh dill if desired, and serve immediately.
