Low Carb Baked Cheeseburger Beef Loaf

Ingredients
  

  • 2 lbs Ground beef 80/20 blend recommended
  • 1.5 cups Cheddar cheese Shredded, divided use
  • 0.5 cup Almond flour Fine grind
  • 2 whole Eggs Large, room temperature
  • 0.5 cup Sugar-free ketchup Divided use
  • 1 tbsp Yellow mustard Standard classic mustard
  • 1 tsp Onion powder Finely ground
  • 1 tsp Garlic powder Finely ground
  • 2 tbsp Fresh parsley Finely chopped
  • 1 tsp Salt Kosher salt
  • 1 tsp Black pepper Freshly ground

Instructions
 

  • Preheat oven to 375F (190C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the ground beef, 1 cup of cheddar cheese, almond flour, eggs, 0.25 cup sugar-free ketchup, mustard, onion powder, garlic powder, parsley, salt, and pepper. Mix until just combined.
  • Form the mixture into a 9x5-inch loaf shape on the prepared baking sheet.
  • Bake for 40 minutes.
  • Remove from the oven, brush the remaining 0.25 cup of sugar-free ketchup over the top, and sprinkle with the remaining 0.5 cup of cheddar cheese.
  • Return to the oven and bake for an additional 10 to 15 minutes until the internal temperature reaches 160F (71C).
  • Let rest for 10 minutes before slicing and serving.
