Preheat oven to 375F (190C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, 1 cup of cheddar cheese, almond flour, eggs, 0.25 cup sugar-free ketchup, mustard, onion powder, garlic powder, parsley, salt, and pepper. Mix until just combined.
Form the mixture into a 9x5-inch loaf shape on the prepared baking sheet.
Bake for 40 minutes.
Remove from the oven, brush the remaining 0.25 cup of sugar-free ketchup over the top, and sprinkle with the remaining 0.5 cup of cheddar cheese.
Return to the oven and bake for an additional 10 to 15 minutes until the internal temperature reaches 160F (71C).
Let rest for 10 minutes before slicing and serving.
