Low Carb Green Chili Chicken Bake

Ingredients
  

  • 3 cup Shredded chicken Pre-cooked, rotisserie preferred
  • 8 oz Cream cheese Softened to room temperature
  • 4 oz Diced green chilies Canned, undrained
  • 1 cup Pepper jack cheese Divided into two 1/2 cup portions
  • 2 tbsp Heavy cream To thin the sauce
  • 1/4 cup Green onions Sliced, for garnish
  • 1 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper

Instructions
 

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x9 inch baking dish.
  • In a large bowl, combine the softened cream cheese, heavy cream, diced green chilies, garlic powder, salt, and black pepper. Stir until completely smooth.
  • Fold the shredded chicken and 1/2 cup of the pepper jack cheese into the cream cheese mixture.
  • Spread the mixture evenly into the prepared baking dish and sprinkle the remaining 1/2 cup of pepper jack cheese on top.
  • Bake for 20-25 minutes until bubbling and golden brown. Remove from the oven, garnish with sliced green onions, and serve warm.
