Meal Prep Morning Sandwiches

Ingredients
  

  • 6 count English muffins Halved and toasted
  • 6 count Large eggs Whisked for baking
  • 6 count Cheddar cheese slices Standard size
  • 12 oz Deli roast beef slices Divided evenly
  • 0.5 tsp Salt For seasoning eggs
  • 0.25 tsp Black pepper For seasoning eggs

Instructions
 

  • Preheat oven to 350F. Whisk eggs with salt and pepper, then pour into a greased 9x13 inch baking dish. Bake for 15 minutes or until set. Slice into 6 equal squares.
  • Slice English muffins in half and lightly toast them.
  • Assemble each sandwich: place one egg square on the bottom half of a muffin, top with 2 oz of beef slices and one slice of cheddar cheese, then cover with the top muffin half.
  • Wrap each assembled sandwich tightly in aluminum foil or parchment paper.
  • Place wrapped sandwiches in a large zip-top freezer bag and store in the freezer for up to 1 month. To reheat, unwrap and microwave for 1-2 minutes until heated through.
