Instructions
Slice the tomatoes, red onion, and cucumber into bite-sized pieces and place them in a large mixing bowl.
Add the chopped fresh parsley to the bowl with the vegetables.
In a small jar, combine the olive oil, lemon juice, sumac, and salt. Shake well to emulsify the dressing.
Pour the dressing over the vegetables and toss gently to coat evenly.
Let the salad rest for 10 minutes before serving to allow the flavors to meld.
