No-Bake Monster Cookie Oatmeal Bites

Ingredients
  

  • 1 1/2 cup Rolled oats Old-fashioned oats preferred
  • 2/3 cup Creamy peanut butter Standard processed peanut butter works best for binding
  • 1/3 cup Honey Can substitute with maple syrup if needed
  • 1 tsp Vanilla extract
  • 1/4 cup Mini chocolate chips
  • 1/4 cup Mini candy-coated chocolates Such as mini M&Ms
  • 2 tbsp Ground flaxseed Optional nutritional boost

Instructions
 

  • In a large mixing bowl, combine the rolled oats, creamy peanut butter, honey, vanilla extract, and ground flaxseed.
  • Stir the mixture until all ingredients are thoroughly incorporated. If the mixture seems too dry, add a teaspoon of honey or peanut butter.
  • Gently fold in the mini chocolate chips and mini candy-coated chocolates until evenly distributed.
  • Cover the bowl and chill in the refrigerator for 30 minutes to make rolling easier.
  • Scoop about 1.5 tablespoons of the mixture at a time and roll firmly into 1-inch balls using your hands.
  • Store the bites in an airtight container in the refrigerator for up to a week.
