No-Bake Monster Cookie Oatmeal Bites

Ingredients
  

  • 1 1/2 cup Rolled oats (old-fashioned) Use certified gluten-free if necessary
  • 1/2 cup Creamy peanut butter Can substitute with sunflower seed butter for nut-free
  • 1/3 cup Honey Substitute maple syrup for a vegan option
  • 1 tsp Vanilla extract Pure vanilla extract preferred
  • 1/4 cup Mini candy-coated chocolates Like mini M&Ms
  • 1/4 cup Mini chocolate chips Semi-sweet or milk chocolate
  • 1 tbsp Chia seeds Optional addition for extra fiber

Instructions
 

  • In a large mixing bowl, combine the rolled oats, creamy peanut butter, honey, and vanilla extract. Stir until the mixture is well blended and slightly sticky.
  • Gently fold in the mini candy-coated chocolates, mini chocolate chips, and chia seeds until evenly distributed.
  • Cover the bowl and chill in the refrigerator for 20 minutes to firm up the mixture, making it easier to shape.
  • Scoop out about 1 tablespoon of the dough at a time and roll tightly between your palms to form 1-inch balls.
  • Place on a parchment-lined baking sheet to set, then transfer to an airtight container. Store in the refrigerator for up to 7 days or freeze for up to 3 months.
