Instructions
In a large mixing bowl, combine the rolled oats, creamy peanut butter, honey, and vanilla extract. Stir until the mixture is well blended and slightly sticky.
Gently fold in the mini candy-coated chocolates, mini chocolate chips, and chia seeds until evenly distributed.
Cover the bowl and chill in the refrigerator for 20 minutes to firm up the mixture, making it easier to shape.
Scoop out about 1 tablespoon of the dough at a time and roll tightly between your palms to form 1-inch balls.
Place on a parchment-lined baking sheet to set, then transfer to an airtight container. Store in the refrigerator for up to 7 days or freeze for up to 3 months.
