Instructions
Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on one side of the pan and roast for 15 minutes.
Remove the pan from the oven. Place the salmon fillets in the center and arrange the asparagus and cherry tomatoes on the other side.
Drizzle the salmon and vegetables with the remaining 2 tablespoons of olive oil. Sprinkle evenly with garlic powder, fresh herbs, salt, and pepper.
Top the salmon with lemon slices. Return to the oven and bake for 10 to 12 minutes, or until the salmon reaches 145°F and flakes easily.
Serve immediately while warm, garnished with extra fresh herbs if desired.
