Oven Baked Herb Salmon with Roasted Vegetables

Ingredients
  

  • 4 6 oz Salmon fillets
  • 1 lb Baby potatoes, halved
  • 1 bunch Asparagus, trimmed
  • 1 cup Cherry tomatoes
  • 3 tbsp Olive oil
  • 1 whole Lemon, sliced
  • 2 tbsp Fresh herbs (dill and parsley), chopped
  • 1 tsp Garlic powder
  • 1 tsp Salt and black pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  • Toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on one side of the pan and roast for 15 minutes.
  • Remove the pan from the oven. Place the salmon fillets in the center and arrange the asparagus and cherry tomatoes on the other side.
  • Drizzle the salmon and vegetables with the remaining 2 tablespoons of olive oil. Sprinkle evenly with garlic powder, fresh herbs, salt, and pepper.
  • Top the salmon with lemon slices. Return to the oven and bake for 10 to 12 minutes, or until the salmon reaches 145°F and flakes easily.
  • Serve immediately while warm, garnished with extra fresh herbs if desired.
