Oven-Roasted Lemon Garlic Cod

Ingredients
  

  • 24 oz cod fillets fresh or thawed
  • 2 tbsp unsalted butter melted
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic minced
  • 1/2 tsp paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper or lightly grease it.
  • Pat the cod fillets completely dry using paper towels to ensure a flaky texture.
  • In a small bowl, whisk together the melted butter, olive oil, fresh lemon juice, lemon zest, minced garlic, paprika, kosher salt, and black pepper.
  • Place the cod fillets in the prepared baking dish and generously brush the butter mixture over the top of each fillet.
  • Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork (internal temperature of 145°F).
  • Remove from the oven, garnish with freshly chopped parsley, and serve immediately with extra lemon wedges.
