Patriotic Berry Cheesecake Squares

Ingredients
  

  • 2 cups Graham cracker crumbs crushed finely
  • 0.5 cup Unsalted butter melted
  • 3 tbsp Granulated sugar for the crust
  • 16 oz Cream cheese softened to room temperature
  • 1 cup Powdered sugar sifted if clumpy
  • 1 cup Heavy whipping cream cold
  • 1 tsp Vanilla extract pure extract preferred
  • 1 cup Fresh blueberries washed and dried completely
  • 2 cups Fresh strawberries hulled and sliced thinly

Instructions
 

  • Line a 9x13 inch baking dish with parchment paper. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared dish. Place in the freezer for 10 minutes to set.
  • In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
  • In a separate bowl, whip the cold heavy whipping cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Spread the creamy filling evenly over the chilled graham cracker crust.
  • Arrange the fresh blueberries in the top left corner to represent the stars. Layer the sliced strawberries in horizontal rows across the remaining surface to create the stripes.
  • Cover tightly and refrigerate for at least 4 hours, or overnight, until firm. Slice into bars before serving.
