Patriotic Chocolate Chip Cookie Ice Cream Sandwiches

Ingredients
  

  • 1.5 cup All-purpose flour sifted
  • 0.5 cup Unsalted butter softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar packed
  • 1 cup Semi-sweet chocolate chips
  • 4 cup Vanilla ice cream slightly softened
  • 0.5 cup Red, white, and blue sprinkles mixed

Instructions
 

  • Preheat oven to 350F. Cream butter, granulated sugar, and brown sugar until smooth.
  • Mix in flour, then fold in chocolate chips to form the dough.
  • Scoop dough onto a baking sheet and bake for 10-12 minutes. Let cookies cool completely.
  • Place a scoop of softened vanilla ice cream between two cooled cookies and press gently.
  • Roll the exposed ice cream edges in the red, white, and blue sprinkles.
  • Freeze for at least 2 hours before serving.
