Instructions
Wash and thoroughly dry the strawberries and blueberries. Cut the leafy tops off the strawberries and use a small spoon or knife to scoop out the centers. Slice a very thin piece off the bottom of each strawberry so they can stand upright.
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. If using, whip in the heavy whipping cream until the mixture is fluffy.
Transfer the cream cheese mixture to a piping bag fitted with a star tip.
Pipe the cream cheese filling into the hollowed-out center of each strawberry, mounding it slightly over the top.
Place one fresh blueberry onto the center of the cream cheese filling. Sprinkle the finished strawberries lightly with graham cracker crumbs before serving. Chill until ready to serve.
