Ingredients
  

  • 2 lbs Chicken thighs bone-in, skin-on
  • 2 tbsp Olive oil extra virgin
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Paprika smoked or sweet
  • 1/2 tsp Dried thyme
  • 1 tsp Salt
  • 1/2 tsp Black pepper freshly ground

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  • Pat the chicken dry with paper towels to ensure crispy skin.
  • In a small bowl, mix the garlic powder, onion powder, paprika, dried thyme, salt, and black pepper.
  • Place the chicken in a large bowl, drizzle with olive oil, and toss to coat evenly.
  • Sprinkle the spice mixture over the chicken, rubbing it into the skin and underneath for maximum flavor.
  • Arrange the pieces skin-side up on the prepared baking sheet.
  • Roast for 35-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  • Let rest for 5 minutes before serving.
