Preheat your oven to 425°F (220°C). Arrange the frozen french fries in a single layer on a large baking sheet and bake according to the package instructions until golden and crispy.
While the fries are baking, heat the vegetable oil in a large skillet over medium-high heat.
Add the sliced ribeye steak to the skillet. Season with half of the salt and pepper. Cook for 2-3 minutes until browned, then remove the steak from the skillet and set aside.
In the same skillet, add the sliced onions, green bell peppers, and orange bell peppers. Sauté for 5-7 minutes until the vegetables are softened and slightly caramelized.
Return the cooked steak to the skillet with the vegetables. Toss everything together to combine and heat through.
Once the fries are done, remove the baking sheet from the oven. Top the fries evenly with the steak and vegetable mixture.
Layer the Provolone cheese slices over the top of the steak and veggies.
Switch the oven to broil (high) and return the baking sheet to the oven. Broil for 1-2 minutes, watching closely, until the cheese is melted and bubbly.
Remove from the oven and serve immediately.
