Pressure Cooker Cajun Rice with Beef Sausage

Ingredients
  

  • 1 lb Boneless skinless chicken thighs Cut into bite-sized pieces
  • 14 oz Beef sausage Sliced into rounds
  • 1 lb Large shrimp Peeled and deveined
  • 2 cups Long grain white rice Rinsed well
  • 2 cups Chicken broth Low sodium preferred
  • 1 medium Red bell pepper Diced
  • 1 medium Green bell pepper Diced
  • 1 cup Scallions Chopped
  • 0.25 cup Fresh parsley Chopped
  • 2 tbsp Cajun seasoning Salt-free if possible
  • 1 tbsp Olive oil Extra virgin

Instructions
 

  • Set pressure cooker to sauté mode and heat the olive oil. Add the sliced beef sausage and chicken pieces, browning them for 5 minutes.
  • Add the diced red and green bell peppers, cooking for 3 minutes until slightly softened.
  • Stir in the rinsed rice, Cajun seasoning, and chicken broth. Scrape the bottom of the pot with a wooden spoon to remove any browned bits.
  • Seal the lid and cook on high pressure for 7 minutes. Follow with a 5-minute natural pressure release, then carefully quick release the remaining pressure.
  • Open the lid, stir in the shrimp, cover the pot again, and let sit for 5 to 7 minutes until the shrimp are pink and cooked through. Garnish with chopped scallions and parsley before serving.
