Instructions
Set the pressure cooker to sauté. Add oil and brown the beef strips for 2-3 minutes.
Add the beef broth, soy sauce, ginger, and garlic. Seal the lid and cook on high pressure for 10 minutes.
Perform a quick release. Stir in the sliced peppers and the cornstarch slurry (cornstarch mixed with 2 tbsp water). Sauté for 3 minutes until the sauce thickens and peppers are crisp-tender.
