Quick Pressure Cooker Beef and Peppers

Ingredients
  

  • 1 lb Flank steak (sliced thinly) Slice against the grain
  • 1 cup Red bell pepper (sliced) Remove seeds
  • 1 cup Green bell pepper (sliced) Remove seeds
  • 1 cup Yellow bell pepper (sliced) Remove seeds
  • 0.25 cup Soy sauce (low sodium) Use tamari if gluten-free
  • 0.5 cup Beef broth Low sodium preferred
  • 2 tbsp Cornstarch For thickening the sauce
  • 1 tbsp Ginger (minced) Fresh is best
  • 2 cloves Garlic (minced) Crushed or minced
  • 1 tbsp Olive oil For sauteing

Instructions
 

  • Set the pressure cooker to sauté. Add oil and brown the beef strips for 2-3 minutes.
  • Add the beef broth, soy sauce, ginger, and garlic. Seal the lid and cook on high pressure for 10 minutes.
  • Perform a quick release. Stir in the sliced peppers and the cornstarch slurry (cornstarch mixed with 2 tbsp water). Sauté for 3 minutes until the sauce thickens and peppers are crisp-tender.
