Roasted Asparagus with Parmesan and Lemon

Ingredients
  

  • 1 bunch Asparagus tough ends trimmed
  • 1 tbsp Olive oil
  • 1/4 cup Parmesan cheese grated
  • 1 whole Lemon half sliced, half zested
  • 1/2 tsp Kosher salt
  • 1/4 tsp Black pepper freshly cracked

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Wash the asparagus and trim or snap off the tough, woody ends.
  • Place the asparagus on a baking sheet in a single layer.
  • Drizzle evenly with olive oil, then sprinkle with salt and black pepper. Toss to coat.
  • Arrange lemon slices over the top of the asparagus.
  • Roast in the preheated oven for 10 to 12 minutes, or until the asparagus is tender and easily pierced with a fork.
  • Remove from the oven and immediately sprinkle with Parmesan cheese and lemon zest.
  • Serve warm alongside your favorite main course.
