Snap or trim the woody ends off the asparagus spears.
Place the asparagus on the prepared baking sheet in a single layer.
Drizzle with extra virgin olive oil and sprinkle evenly with za'atar, kosher salt, and black pepper.
Toss the asparagus until evenly coated with the oil and seasonings.
Roast for 12 to 15 minutes, depending on the thickness of the spears, until tender and lightly caramelized.
Remove from the oven and immediately squeeze fresh lemon juice over the hot asparagus.
Serve warm or at room temperature.
