Rustic Western Ground Beef Stew

Ingredients
  

  • 1 lb Ground beef Lean preferred
  • 1 cup Yellow onion Diced
  • 2 cloves Garlic Minced
  • 4 cups Beef broth Low sodium
  • 2 cups Potatoes Peeled and diced
  • 1 cup Carrots Chopped
  • 1 cup Green beans Chopped into bite-sized pieces
  • 14.5 oz Diced tomatoes Undrained
  • 15 oz Small white beans Rinsed and drained
  • 0.5 cup Green olives Sliced
  • 1 cup Peas Frozen
  • 2 tbsp Parsley Freshly chopped

Instructions
 

  • Brown the ground beef with diced onion and minced garlic in a large pot over medium heat until fully cooked. Drain excess fat.
  • Stir in the beef broth, diced tomatoes, potatoes, and carrots. Bring the mixture to a gentle boil, then reduce heat, cover, and simmer for 20 minutes.
  • Add the green beans, small white beans, and green olives. Continue to simmer for an additional 15 minutes until vegetables are tender.
  • Stir in the frozen peas and chopped parsley during the last 5 minutes of cooking. Serve hot.
