Instructions
Brown the ground beef with diced onion and minced garlic in a large pot over medium heat until fully cooked. Drain excess fat.
Stir in the beef broth, diced tomatoes, potatoes, and carrots. Bring the mixture to a gentle boil, then reduce heat, cover, and simmer for 20 minutes.
Add the green beans, small white beans, and green olives. Continue to simmer for an additional 15 minutes until vegetables are tender.
Stir in the frozen peas and chopped parsley during the last 5 minutes of cooking. Serve hot.
