Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
Unroll the crescent dough onto a clean cutting board. Pinch the seams together firmly to create one large, seamless rectangle of dough.
Layer the thinly sliced deli roast beef evenly over the dough, followed by an even layer of cheddar cheese slices.
Fold the dough in half lengthwise over the fillings. Using a sharp knife or pizza cutter, cut the filled dough into 8 equal-sized strips.
Carefully twist each strip 2 to 3 times and place them onto the prepared baking sheet, leaving an inch of space between each one.
In a small bowl, combine the melted butter, dried herbs, and poppy seeds. Use a pastry brush to coat the top of each twisted stick.
Bake for 12 to 15 minutes, or until the pastry is golden brown and the cheese is fully melted. Serve warm.
