Slow Cooker Beef and Potato Curry

Ingredients
  

  • 2 lbs beef chuck stew meat cut into 1-inch chunks
  • 1.5 lbs baby potatoes halved
  • 1 large yellow onion diced
  • 3 cloves garlic minced
  • 2 tbsp curry powder
  • 1 can (15 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1/4 cup fresh parsley chopped, for garnish

Instructions
 

  • Place the beef chuck chunks, baby potatoes, diced onion, and minced garlic into the slow cooker.
  • In a medium bowl, whisk together the curry powder, diced tomatoes, beef broth, and tomato paste until fully combined.
  • Pour the red curry sauce mixture over the beef and potatoes, stirring gently to ensure all ingredients are coated.
  • Cover the slow cooker and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender.
  • Garnish with chopped fresh parsley and serve hot.
