Instructions
Place the beef chuck chunks, baby potatoes, diced onion, and minced garlic into the slow cooker.
In a medium bowl, whisk together the curry powder, diced tomatoes, beef broth, and tomato paste until fully combined.
Pour the red curry sauce mixture over the beef and potatoes, stirring gently to ensure all ingredients are coated.
Cover the slow cooker and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender.
Garnish with chopped fresh parsley and serve hot.
