Instructions
Place the sliced onions and chicken breasts at the bottom of the slow cooker.
Add the chopped zucchini, yellow squash, halved cherry tomatoes, and chicken broth.
Drizzle the fresh lemon juice and lime juice evenly over the chicken and vegetables.
Cover and cook on LOW for 4 hours, or until the chicken reaches an internal temperature of 165°F.
During the last 30 minutes of cooking, gently stir in the sliced peaches to warm them through without letting them become mushy.
Serve warm, garnished with chopped fresh basil and cilantro.
