Slow Cooker Citrus Peach Chicken with Summer Vegetables

Ingredients
  

  • 1.5 lbs Boneless skinless chicken breasts Trimmed of excess fat
  • 1 cup Cherry tomatoes Halved
  • 1 cup Zucchini Chopped into thick pieces
  • 1 cup Yellow squash Chopped into thick pieces
  • 0.5 cup Sliced onion Red or yellow
  • 1 cup Sliced peaches Fresh or slightly thawed from frozen
  • 2 tbsp Fresh lemon juice Freshly squeezed
  • 2 tbsp Fresh lime juice Freshly squeezed
  • 2 tbsp Fresh basil Chopped, for garnish
  • 2 tbsp Fresh cilantro Chopped, for garnish
  • 0.5 cup Low-sodium chicken broth Adds moisture for the slow cooker

Instructions
 

  • Place the sliced onions and chicken breasts at the bottom of the slow cooker.
  • Add the chopped zucchini, yellow squash, halved cherry tomatoes, and chicken broth.
  • Drizzle the fresh lemon juice and lime juice evenly over the chicken and vegetables.
  • Cover and cook on LOW for 4 hours, or until the chicken reaches an internal temperature of 165°F.
  • During the last 30 minutes of cooking, gently stir in the sliced peaches to warm them through without letting them become mushy.
  • Serve warm, garnished with chopped fresh basil and cilantro.
