Slow Cooker Pineapple Barbecue Meatballs

Ingredients
  

  • 32 oz frozen fully cooked beef meatballs Homestyle or plain variety preferred
  • 20 oz canned pineapple chunks Drained, reserve 1/4 cup juice
  • 1 1/2 cups barbecue sauce Sweet or smoky style
  • 1/4 cup brown sugar Packed
  • 2 tbsp soy sauce Low sodium recommended
  • 1 tsp garlic powder
  • 2 stalks green onions Sliced, for garnish

Instructions
 

  • Place the frozen beef meatballs and the drained pineapple chunks into the basin of a 6-quart slow cooker.
  • In a medium mixing bowl, whisk together the barbecue sauce, brown sugar, soy sauce, garlic powder, and the reserved 1/4 cup of pineapple juice until smooth.
  • Pour the sauce mixture evenly over the meatballs and pineapple. Gently stir the contents to ensure every meatball is coated in the sauce.
  • Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the meatballs are hot throughout and the sauce is bubbly.
  • Give the meatballs a final stir to coat them in the glaze before serving. Garnish with sliced green onions immediately before serving.
