Pat the chicken pieces dry with paper towels. In a small bowl, combine salt, black pepper, garlic powder, and onion powder. Rub this seasoning blend generously over all sides of the chicken.
Place the seasoned chicken in the bottom of your slow cooker, ideally in a single layer. Pour the chicken broth (or other liquid) around the chicken.
Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and can be easily shredded with a fork.
Carefully remove the cooked chicken from the slow cooker and place it on a large plate or cutting board. Let it rest for a few minutes. Using two forks (or a hand mixer for faster shredding), pull the chicken apart to your desired consistency.
Return the shredded chicken to the slow cooker with the flavorful cooking liquids. Toss thoroughly and let it sit on the 'Warm' setting for 10-15 minutes to absorb all the delicious moisture and flavor before serving.
