Slow Cooker Shredded Chicken

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts or thighs, or a mix of both
  • 1 cup chicken broth or vegetable broth, or water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions
 

  • Pat the chicken pieces dry with paper towels. In a small bowl, combine salt, black pepper, garlic powder, and onion powder. Rub this seasoning blend generously over all sides of the chicken.
  • Place the seasoned chicken in the bottom of your slow cooker, ideally in a single layer. Pour the chicken broth (or other liquid) around the chicken.
  • Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and can be easily shredded with a fork.
  • Carefully remove the cooked chicken from the slow cooker and place it on a large plate or cutting board. Let it rest for a few minutes. Using two forks (or a hand mixer for faster shredding), pull the chicken apart to your desired consistency.
  • Return the shredded chicken to the slow cooker with the flavorful cooking liquids. Toss thoroughly and let it sit on the 'Warm' setting for 10-15 minutes to absorb all the delicious moisture and flavor before serving.
