Southwest Sweet Potato and Beef Corn Bowl

Ingredients
  

  • 1 lb ground beef lean
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil for roasting
  • 2 tbsp taco seasoning store-bought or homemade
  • 2 cups corn roasted or canned/drained
  • 1 cup black beans rinsed and drained
  • 2 tbsp mayonnaise full fat or light
  • 2 tbsp sour cream can substitute greek yogurt
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp Tajin seasoning chili lime blend
  • 1/4 cup cotija cheese crumbled
  • 1 whole avocado sliced
  • 1 whole jalapeno sliced
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Preheat oven to 400F. Toss sweet potato cubes with olive oil and a pinch of salt. Roast for 25 minutes until tender.
  • In a skillet over medium heat, brown the ground beef. Drain excess fat, add taco seasoning and 1/4 cup of water, and simmer for 3 minutes.
  • In a bowl, mix corn, black beans, mayonnaise, sour cream, lime juice, Tajin, and cotija cheese to make the creamy corn salad.
  • Assemble the bowls by dividing the sweet potatoes and ground beef equally. Top with the creamy corn salad, sliced avocado, jalapeno, and fresh cilantro.
