Spicy Barbecued Beef Back Ribs

Ingredients
  

  • 3 lbs Beef Back Ribs Divided into 2 racks
  • 2 tbsp Kosher salt
  • 1 tbsp Black pepper Freshly ground
  • 1 tbsp Garlic powder
  • 1 cup Ketchup
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Brown sugar Packed
  • 2 tbsp Chipotle peppers in adobo sauce Minced - this is the secret kick
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Fresh parsley Chopped, for garnish

Instructions
 

  • Prep the ribs by removing the membrane from the back of the racks.
  • Mix kosher salt, black pepper, and garlic powder. Rub evenly over the beef ribs.
  • Preheat the grill for two-zone cooking (one side for indirect heat at 275°F, one side for direct heat).
  • Place the ribs on the indirect heat side, close the lid, and cook for 2 to 2.5 hours until tender.
  • While cooking, combine ketchup, apple cider vinegar, brown sugar, chipotle peppers, and Worcestershire sauce in a saucepan. Simmer for 10 minutes to create the spicy BBQ sauce.
  • Move the ribs to the direct heat side. Brush generously with the spicy BBQ sauce and grill for 5-10 minutes, turning once, until the sauce caramelizes.
  • Remove from the grill, let rest for 10 minutes, and garnish with fresh chopped parsley before serving.
