Ingredients

  • 1.5 lbs Chicken breast Boneless and skinless, cut into 1-inch cubes
  • 1 tbsp Smoked paprika Use high-quality smoked paprika for the best flavor
  • 1 tsp Hot paprika Substitute with cayenne pepper if hot paprika is unavailable
  • 2 tbsp Olive oil Extra virgin
  • 1 tsp Garlic powder
  • 1 tsp Salt Kosher salt preferred
  • 0.5 tsp Black pepper Freshly ground
  • 6 count Wooden skewers Soaked in water

Instructions

  • Soak wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
  • Cut the chicken breasts into even 1-inch cubes to ensure they cook at the same rate.
  • In a large mixing bowl, whisk together the olive oil, smoked paprika, hot paprika, garlic powder, salt, and black pepper.
  • Add the chicken cubes to the bowl and toss thoroughly until every piece is evenly coated in the spice mixture. Let marinate at room temperature for at least 15 minutes.
  • Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small amount of space at the ends for easy handling.
  • Preheat your grill to medium-high heat. Place the skewers on the grates and grill for 10 to 12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165F.
