Instructions
Whisk soy sauce, honey, minced garlic, ginger, rice vinegar, and sesame oil in a bowl to create the marinade.
Toss the cubed chicken in the marinade, cover, and refrigerate for at least 30 minutes.
Thread the marinated pieces onto soaked wooden or metal skewers. Reserve the leftover marinade.
Pour the reserved marinade into a small saucepan and simmer over medium heat for 5 minutes until it thickens into a glaze.
Grill or bake the kebabs at 400 degrees Fahrenheit for 12 to 15 minutes, turning occasionally and brushing with the thickened glaze until cooked through.
Garnish with crushed peanuts, fresh cilantro, and red chili flakes before serving with your favorite dipping sauce.
