Summer Watermelon & Berry Beef Grazing Board

Ingredients
  

  • 4 cups Watermelon, cubed Pat dry to remove excess moisture
  • 2 cups Strawberries, halved Stems removed
  • 4 oz Beef Prosciutto Thinly sliced, folded into ribbons
  • 4 oz Beef Salami Thinly sliced
  • 8 oz Brie cheese Whole wheel
  • 4 oz Goat cheese Honey rolled log
  • 2 cups Crackers Assorted varieties
  • 0.25 cup Fresh mint leaves For garnish
  • 2 tbsp Honey For drizzling

Instructions
 

  • Begin by cubing 4 cups of watermelon and halving 2 cups of fresh strawberries. Pat the fruit dry slightly to prevent excess moisture on the board.
  • Place the 8 oz Brie wheel and the 4 oz goat cheese log in different, opposing areas of the board to act as visual and structural anchors.
  • Fold the 4 oz of beef prosciutto into ribbons and fan out the 4 oz of beef salami, tucking them around the cheese anchors.
  • Arrange the prepped watermelon and strawberries in flowing, curved patterns across the remaining empty spaces of the board.
  • Fill in the remaining gaps and borders with 2 cups of assorted crackers.
  • Scatter 1/4 cup of fresh mint leaves over the fruit for a pop of green and serve alongside a small dish containing 2 tbsp of honey for drizzling.
