Instructions
Preheat oven to 400F. Toss the cubed sweet potato with 1 tbsp of olive oil. Spread on a baking sheet and roast for 20 minutes until tender.
In a small bowl, whisk together the sweet chili sauce and soy sauce to create the glaze.
Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat. Add the salmon fillets and sear for 3 to 4 minutes per side.
During the last minute of cooking, brush the glaze generously over the salmon fillets until the sauce caramelizes slightly. Remove from heat.
Assemble the bowls by dividing the cooked white rice, roasted sweet potatoes, and sliced avocado evenly between two dishes.
Top each dish with a glazed salmon fillet, garnish with chopped cilantro and sesame seeds, and serve immediately.
