Quick & Healthy Sweet and Spicy Glazed Seafood Rice Dish

Sweet Chili Salmon Bowl

Ingredients
  

  • 2 fillet Salmon fillets 6 oz each
  • 1 cup White rice Cooked
  • 1 whole Sweet potato Medium, cubed
  • 1 whole Avocado Sliced
  • 0.25 cup Sweet chili sauce Store-bought or homemade
  • 1 tbsp Soy sauce Low sodium preferred
  • 2 tbsp Olive oil Divided use
  • 0.25 cup Cilantro Freshly chopped
  • 1 tbsp Sesame seeds Toasted

Instructions
 

  • Preheat oven to 400F. Toss the cubed sweet potato with 1 tbsp of olive oil. Spread on a baking sheet and roast for 20 minutes until tender.
  • In a small bowl, whisk together the sweet chili sauce and soy sauce to create the glaze.
  • Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat. Add the salmon fillets and sear for 3 to 4 minutes per side.
  • During the last minute of cooking, brush the glaze generously over the salmon fillets until the sauce caramelizes slightly. Remove from heat.
  • Assemble the bowls by dividing the cooked white rice, roasted sweet potatoes, and sliced avocado evenly between two dishes.
  • Top each dish with a glazed salmon fillet, garnish with chopped cilantro and sesame seeds, and serve immediately.
