Sweet Corn and Crispy Beef Bacon Side Dish

Ingredients
  

  • 4 cups Corn kernels Fresh, canned, or thawed from frozen
  • 8 oz Beef bacon Cooked until crispy and crumbled
  • 1/2 cup Mayonnaise Full fat preferred for better texture
  • 1/4 cup Sour cream Can substitute with plain Greek yogurt
  • 1 tbsp Apple cider vinegar For a tangy finish
  • 1/4 cup Fresh chives Finely chopped
  • 1/2 tsp Kosher salt Adjust to taste
  • 1/2 tsp Black pepper Freshly cracked

Instructions
 

  • Cook the beef bacon in a large skillet over medium heat until crispy. Remove, drain on paper towels, and crumble into small pieces.
  • In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, salt, and black pepper until completely smooth.
  • Add the corn kernels, crumbled beef bacon, and chopped fresh chives to the bowl with the dressing.
  • Toss gently until all ingredients are evenly coated. Cover and refrigerate for at least 30 minutes before serving.
