Instructions
Cook the beef bacon in a large skillet over medium heat until crispy. Remove, drain on paper towels, and crumble into small pieces.
In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, salt, and black pepper until completely smooth.
Add the corn kernels, crumbled beef bacon, and chopped fresh chives to the bowl with the dressing.
Toss gently until all ingredients are evenly coated. Cover and refrigerate for at least 30 minutes before serving.
