Preheat the oven to 400F (200C). Toss the diced sweet potatoes with 1 tbsp olive oil, 1 tsp smoked paprika, 0.5 tsp salt, and 0.25 tsp black pepper. Spread evenly on a baking sheet.
Roast the sweet potatoes for 25 minutes, or until tender and lightly browned, flipping halfway through.
Meanwhile, heat a large skillet over medium-high heat. Add 1 lb ground beef, 1 tsp garlic powder, 0.5 tsp salt, and 0.25 tsp pepper. Cook for 7 to 8 minutes, breaking it apart until browned and cooked through. Drain excess grease.
Assemble the bowls by dividing the roasted sweet potatoes and cooked beef evenly among 4 serving dishes.
Top each bowl with 0.25 cup of cottage cheese, a quarter of the sliced avocado, and 1 tbsp fresh cilantro. Drizzle 0.5 tbsp hot honey over the top of each right before serving.
