Ingredients

  • 1 container prepared hummus (approx. 10-16 oz)
  • 4-6 pieces pita bread
  • 1 fresh lime for juice
  • 2-3 tablespoons extra virgin olive oil
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley chopped
  • 2-3 medium carrots

Instructions

  • Take your chosen prepared hummus and transfer it to a small bowl.
  • Cut a fresh lime in half. Squeeze the juice of about half the lime (or more, to taste) directly into the hummus.
  • Using a spoon or a small whisk, stir the hummus and lime juice together thoroughly until light in color and zesty. Taste and adjust with more lime if desired.
  • Once your hummus is brightened with lime, spoon it onto a serving plate. Spread it out into a flat circle or create a slight well in the center using the back of your spoon.
  • Carefully pour a good amount of extra virgin olive oil over the top of the hummus. It should form a glistening pool.
  • Next, sprinkle paprika evenly over the oiled hummus.
  • Finally, scatter freshly chopped parsley liberally over the paprika and olive oil.
  • Warm the pita bread using your preferred method (toaster oven for 1-2 minutes, microwave for 15-20 seconds, or stovetop for 30-60 seconds per side). Once warmed, slice the pita bread into triangles or strips.
  • Wash and slice fresh carrots into sturdy sticks, about 3-4 inches long, or into thick coins. Arrange the carrot sticks attractively around the edge of the plate alongside the warm pita.
