Ingredients
  

  • 1 lb deli roast beef thinly sliced
  • 8 oz cream cheese softened
  • 4 whole dill pickles cut into spears
  • 12 whole chocolate cupcakes pre-baked
  • 1 cup white vanilla frosting room temperature
  • 2 tbsp red, white, and blue sprinkles for decoration
  • 24 whole chocolate wafers round
  • 1 pint vanilla ice cream softened
  • 12 whole sugar cookies pre-baked
  • 1/2 cup blue candy pieces e.g., chocolate-coated candies
  • 9 oz tortilla chips one standard bag
  • 1 cup tomato salsa mild or medium
  • 1 cup red, white, and blue gummy candies assorted
  • 1 cup red, white, and blue chocolate-coated candies assorted

Instructions
 

  • Prepare the beef rolls: Spread a thin layer of cream cheese on each slice of beef. Wrap around a pickle spear and slice into 1-inch pinwheels. Keep chilled.
  • Assemble the ice cream sandwiches: Place a scoop of softened vanilla ice cream between two chocolate wafers. Press gently and freeze until firm.
  • Decorate the treats: Frost the chocolate cupcakes with white frosting and top with patriotic sprinkles. Press blue candy pieces into the sugar cookies.
  • Arrange the spread: Place the salsa in a central bowl surrounded by tortilla chips.
  • Fill the board: Add the beef roll-ups, decorated cupcakes, and cookies in alternating sections. Fill gaps with gummy candies and chocolate-coated candies. Keep ice cream sandwiches in the freezer until ready to serve.
