Watermelon Cucumber Salad with Feta

Ingredients
  

  • 4 cups Watermelon Cubed, seedless preferred
  • 1 large English cucumber Sliced into half-moons
  • 1/2 cup Feta cheese Crumbled
  • 1/4 cup Fresh mint Roughly chopped
  • 1/2 tsp Black pepper Freshly ground
  • 2 tbsp Extra virgin olive oil For the dressing
  • 2 tbsp Lime juice Freshly squeezed

Instructions
 

  • Cut the watermelon into bite-sized cubes and slice the cucumber. Place them both into a large serving bowl.
  • Add the crumbled feta cheese and chopped fresh mint to the bowl with the watermelon and cucumber.
  • In a small jar or bowl, combine the olive oil, freshly squeezed lime juice, and black pepper. Whisk or shake vigorously to emulsify.
  • Drizzle the dressing over the salad ingredients.
  • Gently toss the salad with a large spoon to ensure everything is coated, taking care not to crush the watermelon pieces.
  • Serve immediately, or chill in the refrigerator for up to 30 minutes before serving.
