Watermelon

Sliced into half-moons

Feta cheese
Crumbled

Extra virgin olive oil
For the dressing

Lime juice
Freshly squeezed
Instructions
Cut the watermelon into bite-sized cubes and slice the cucumber. Place them both into a large serving bowl.
Add the crumbled feta cheese and chopped fresh mint to the bowl with the watermelon and cucumber.
In a small jar or bowl, combine the olive oil, freshly squeezed lime juice, and black pepper. Whisk or shake vigorously to emulsify.
Drizzle the dressing over the salad ingredients.
Gently toss the salad with a large spoon to ensure everything is coated, taking care not to crush the watermelon pieces.
Serve immediately, or chill in the refrigerator for up to 30 minutes before serving.
