Traditional Skillet Cornmeal Bread

Ingredients
  

  • 2 cup Yellow cornmeal Stone-ground preferred
  • 1 tsp Salt
  • 0.5 tsp Baking soda
  • 1 tsp Baking powder
  • 1.5 cup Buttermilk Room temperature
  • 2 large Eggs Lightly beaten
  • 3 tbsp Beef tallow Used instead of pork drippings

Instructions
 

  • Place a 10-inch cast iron skillet in the oven and preheat to 400F.
  • Whisk together the cornmeal, salt, baking soda, and baking powder in a large mixing bowl.
  • In a separate bowl, whisk the buttermilk and eggs.
  • Remove the hot skillet from the oven, add the beef tallow, and swirl to coat the pan. Pour the excess into the buttermilk mixture.
  • Pour the wet ingredients into the dry ingredients and stir just until combined.
  • Pour the batter into the hot skillet and bake for 20 to 25 minutes until golden brown.
